Farmer’s in Punjab still use the traditional Gadda (Cart) although their use is on the decreasing side and very few people even make new ones.
Gone are the days when crops were cut by hand, combine harvesters are used now a days and the life of the farmer in Punjab has become a little easier.
Punjabi Flavours Rule in Sikh-Canadian Stronghold: Brampton, Ontario, Canada
Once a year before winter starts, Rick Singh Matharu’s mother and grandmother perform a pungent annual ritual in the backyard of their Brampton home.
Rick retrieves a one-litre Mason jar from the fridge and encourages me to take a whiff of its lightly browned, oil-slicked contents: sweet, sauteed onions. Several pounds of them cooked down in this jar.
“Just like Italians do with tomato sauce, they’ll do the same thing with onions,” he explains. “They’ll take a whole day and stink up the neighbourhood.”
Onions, garlic and ginger are the aromatic trinity of Punjabi cooking, I learn. I’m at Rick’s house to talk about the culture of food in Brampton (my home for a month) and just how far removed it is from the scene in Toronto’s core — the heart of the metropolis only a few miles away .
I’ve taken temporary residence in Brampton because for years it’s been at the centre of many demographic changes that are slowly taking hold in other parts of the country. Its growth, fuelled largely by immigration from Punjab, has impacted everything from health-care delivery to the culinary landscape.
Bramptonians don’t have the same Yelping, Chowhounding and food blogging tendencies as Torontonians (in fact, I’m a little embarrassed when I pull out my phone to take pictures of the bake and shark I order at a Trinidadian restaurant in a Brampton strip mall). So Rick, an amateur cook turned food blogger, is a rare specimen. He was born and raised in Brampton and learned to cook everything from aloo gobi to karrhi pakora from his mother – but he usually puts a fusion twist on his dishes.
Last year, he won the Food Network’s Recipes to Riches show with an Italy-meets-Punjab entrée: a butter chicken lasagna.
On this night, in his kitchen at least, diplomatic relations between Lebanon and Punjab are strengthened. He’s making a Punjabi-style shawarma plate: basmati rice, tandoori-spiced chicken, garlic sauce spiked with fresh mint and basil, sliced onions topped with balsamic vinegar and a salad served with olives, banana peppers and pickled turnip.
Dessert is mango milkshakes with cardamom.
We pick up most of the essentials he doesn’t already have at home – chicken thighs, fresh mint, yogurt, sour cream – at ‘No Frills’ and then drive down the road to ‘Subzi Mandi’, a Punjabi grocer, for Thai chilies and three pounds of totapuri mangoes (an variety I’ve never seen before).
Bernice Leung, the ethnic practice lead at Nielsen Canada (the consumer and media research group), tells me Punjabis in Canada “tend to compartmentalize their everyday purchases into two or more stores – typically one ethnic store and one mainstream store.”
They buy far more fresh ingredients, such as vegetables, eggs and yogurt, than the general population, which suggests they cook at home way more than they eat out. It makes sense in Brampton, too, where many Punjabi families live in multi-generational households and there are often two or three primary cooks on hand (Rick, his wife Harjot Kaur and his mother, Manjeet Kaur, trade off duties in their household of six).
And it’s not just Sunday cooking with leftovers to last the week in the household; they whip up impressive meals on weeknights too – albeit with some shortcuts.
Because Rick can only marinate the chicken in a yogurt and spice blend for about an hour (instead of the ideal – overnight), when the chicken is nearly done cooking in the oven, he brings out a pair of kitchen scissors and starts snipping away at the larger chunks of meat, allowing the tangy, spicy sauce to seep into the cuts and add extra flavour.
As he prepares his garlic sauce in the blender, I ask Rick for recommendations of places to eat in the city. He rattles off a long list of takeout joints – the best spots for fish pakoras (Indian Sweet Master), Caribbean fried chicken (Sunrise Caribbean) and Punjabi-style pizza, which is regular pizza topped with garlic, ginger, coriander, spices and green chilies. Pizza Depot and Popular Pizza were the joints that brought the trend to Brampton, he says, and it’s been such a hit that one major pizza chain (which shall remain nameless) has hopped on the bandwagon. While they won’t give you your coriander and chili-topped pie if you call their central ordering line, they will if you place your order in person at certain Brampton locations, he tells me.
When I asked him to point me to some of his city’s upscale establishments, his brow furrows.
There’s the one buffet place, he says, and another newer spot in a power centre known more for its desi decor than its food. Aside from a handful of Italian restaurants, there isn’t much of a fine dining scene in Brampton.
“I don’t think [an upscale Punjabi restaurant] would run as well if they were to open one – especially in this area – because everyone’s competing with $2.99 chhole bhature [at takeout restaurants],” he says.

ਬੇਰੁਖ਼ੀ ਦਾ ਸ਼ਿਕਾਰ ਧਨੌਲੇ ਦਾ ਇਤਿਹਾਸਕ ਕਿਲ੍ਹਾ
ਸੰਨ 1755 ‘ਚ ਮਹਾਰਾਜਾ ਜਸਮੇਰ ਨੇ ਕਸਬਾ ਧਨੌਲਾ ‘ਚ ਲਗਪਗ ਪੰਜ ਏਕੜ ਜ਼ਮੀਨ ਵਿਚ ਵਿਸ਼ਾਲ ਕਿਲਾ ਬਣਾਇਆ ਸੀ। ਇਸ ਦੀ ਇਮਾਰਤ, ਇਮਾਤਰਸਾਜ਼ੀ ਦਾ ਇਕ ਅਤਿ ਸੁੰਦਰ ਨਮੂਨਾ ਹੈ। ਇਸ ਦਾ ਵਿਸ਼ਾਲ ਦਰਵਾਜ਼ਾ ਅਤੇ ਵੱਡੀਆਂ-ਵੱਡੀਆਂ ਦਿਓ-ਕੱਦ ਕੰਧਾਂ ਇਸ ਦੀ ਮਜ਼ਬੂਤੀ ਦੀ ਹਾਂਮੀ ਭਰਦੀਆਂ ਹਨ।19ਵੀਂ ਸਦੀ ਦੇ ਅੱਧ ਤਕ ਇਹ ਕਿਲਾ ਰਿਆਸਤ ਨਾਭਾ ਦਾ ਸਦਰ ਮੁਕਾਮ ਰਿਹਾ। ਇਸ ਵਿਚ ਮਹਾਰਾਜੇ ਨੇ ਇਕ ਵਿਸ਼ੇਸ਼ ਕਮਰਾ ਗੁਰੂ ਗ੍ਰੰਥ ਸਾਹਿਬ ਦੇ ਪ੍ਰਕਾਸ਼ ਲਈ ਬਣਵਾਇਆ ਸੀ ਜੋ ਅਜੇ ਵੀ ਕਾਇਮ ਹੈ। ਇਸ ਕਿਲੇ ਵਿਚਲੀ ਖੂਹੀ ਦੇ ਪਾਣੀ ਦੀਆਂ ਬਜ਼ੁਰਗ ਸਿਫਤਾਂ ਕਰਦੇ ਹੋਏ ਆਖਦੇ ਹਨ ਕਿ ਇਹਦਾ ਪਾਣੀ ਨਾਭੇ ਰਾਣੀਆਂ ਲਈ ਵਿਸ਼ੇਸ਼ ਤੌਰ ‘ਤੇ ਲਿਜਾਇਆ ਜਾਂਦਾ ਸੀ।
ਰਿਆਸਤਾਂ ਟੁੱਟਣ ਪਿੱਛੋਂ ਇਸ ਕਿਲ੍ਹੇ ਨੇ ਥਾਣੇ ਦਾ ਰੂਪ ਅਖ਼ਤਿਆਰ ਕਰ ਲਿਆ। ਕਾਫ਼ੀ ਸਮਾਂ ਇਹ ਕਿਲਾ ਨਕਸਲਵਾੜੀ ਲਹਿਰ ਦੇ ਕਾਰਕੁਨਾਂ ‘ਤੇ ਤਸ਼ੱਦਦ ਲਈ ਵਰਤਿਆ ਜਾਂਦਾ ਰਿਹਾ।
ਸਾਕਾ ਨੀਲਾ ਤਾਰਾ ਵੇਲੇ ਪਟਿਆਲਾ ਰੇਂਜ ਦੇ ਆਈ.ਜੀ. ਪਰਮਜੀਤ ਸਿੰਘ ਗਿੱਲ ਇਥੇ ਬਤੌਰ ਐਸ.ਐਚ.ਓ. ਸਨ। ਉਨ੍ਹਾਂ ਨੇ ਇਸ ਦੀ ਮੁਰੰਮਤ ਕਰਾਉਣ ਦਾ ਬੀੜਾ ਚੁੱਕਿਆ ਸੀ ਪਰ ਉਨ੍ਹਾਂ ਦੀ ਬਦਲੀ ਤੋਂ ਬਾਅਦ ਇਹ ਕੰਮ ਵਿਚੇ ਹੀ ਰਹਿ ਗਿਆ। ਇਸ ਤੋਂ ਕਾਫ਼ੀ ਸਮਾਂ ਬਾਅਦ ਥਾਣੇ ਨੂੰ ਤਬਦੀਲ ਕਰਕੇ ਇਸ ਦੇ ਵਿਹੜੇ ਵਿੱਚ ਨਵੇਂ ਥਾਣੇ ਦੀ ਇਮਾਰਤ ਬਣਾਈ ਗਈ। ਜਿਸ ਦਾ ਉਦਘਾਟਨ ਤਤਕਾਲੀ ਪੰਜਾਬ ਪੁਲੀਸ ਦੇ ਮੁਖੀ ਕੇ.ਪੀ.ਐਸ. ਗਿੱਲ ਨੇ ਕੀਤਾ ਸੀ ਪ੍ਰੰਤੂ ਇਸ ਦੇ ਬਾਹਰੀ ਅਕਾਰ ਦੀ ਮੁਰੰਮਤ ਤੱਕ ਨਾ ਕਰਵਾਈ ਗਈ। ਹੁਣ ਤਾਂ ਇਸਦੀਆਂ ਆਲੇ-ਦੁਆਲੇ ਦੀਆਂ ਕੰਧਾਂ ਹੀ ਰਹਿ ਗਈਆਂ ਹਨ। ਇਥੇ ਜੇਬਾਂ ‘ਗਰਮ’ ਕਰਨ ਵਾਲੇ ਥਾਣਾ ਮੁਖੀ ਤਾਂ ਵਧੇਰੇ ਆਏ ਪ੍ਰੰਤੂ ਪਰਮਜੀਤ ਸਿੰਘ ਗਿੱਲ ਵਰਗਾ ਕਲਾ ਪ੍ਰੇਮੀ ਅਤੇ ਇਤਿਹਾਸਕ ਇਮਾਰਤਾਂ ਨੂੰ ਪਿਆਰ ਕਰਨ ਵਾਲਾ ਕੋਈ ਅਧਿਕਾਰੀ ਨਹੀਂ ਪਧਾਰਿਆ। ਸ਼ਾਇਦ ਪੁਲੀਸ ਤੇ ਕਲਾ ਦੇ ਕੋਈ ਮੇਲ ਨਾ ਹੋਣ ਕਾਰਨ ਹੀ ਇਸ ਦੀ ਤਰਸਯੋਗ ਹਾਲਤ ਬਣੀ ਹੋਈ ਹੈ।
ਇਹ ਕਿਲ੍ਹਾ ਇਕੱਲੇ ਥਾਣਾ ਮੁਖੀਆਂ ਦੀ ਬੇਰੁਖ਼ੀ ਦਾ ਸ਼ਿਕਾਰ ਹੀ ਨਹੀਂ ਹੋਇਆ ਸਗੋਂ ਇਸ ਨੂੰ ਸਿਆਸਤਦਾਨਾਂ, ਧਾਰਮਿਕ ਅਤੇ ਸਮਾਜ ਸੇਵੀ ਜਥੇਬੰਦੀਆਂ ਨੇ ਵੀ ਦੁਰਕਾਰਿਆ ਹੋਇਆ ਹੈ। ਕੈਪਟਨ ਅਮਰਿੰਦਰ ਸਿੰਘ ਦੀ ਸਰਕਾਰ ਸਮੇਂ ਇਸ ਹਲਕੇ ਤੋਂ ਅਕਾਲੀ ਦਲ ਦੇ ਭਾਈ ਗੋਬਿੰਦ ਸਿੰਘ ਲੌਂਗੋਵਾਲ ਵਿਧਾਇਕ ਸਨ ਤੇ ਬੀਬੀ ਰਾਜਿੰਦਰ ਕੌਰ ਭੱਠਲ ਦੇ ਭਰਾ ਕੁਲਦੀਪ ਸਿੰਘ ਭੱਠਲ ਹਲਕਾ ਇੰਚਾਰਜ ਸਨ, ਉਦੋਂ ਹੋਰਨਾਂ ਕੰਮਾਂ ਲਈ ਉਨ੍ਹਾਂ ਬਹੁਤ ਗਰਾਂਟਾਂ ਵੰਡੀਆਂ ਪਰ ਕਿਲੇ ਦੀ ਮੁਰੰਮਤ-ਸੰਭਾਲ ਵੱਲ ਉਨ੍ਹਾਂ ਦੀ ਨਜ਼ਰ ਨਹੀਂ ਗਈ। ਉਨ੍ਹਾਂ ਤੋਂ ਬਾਅਦ ਕੁਲਦੀਪ ਸਿੰਘ ਭੱਠਲ ਵਿਧਾਇਕ ਬਣ ਗਏ ਤੇ ਸਰਕਾਰ ਅਕਾਲੀ-ਭਾਜਪਾ ਦੀ ਆ ਗਈ ਤੇ ਭਾਈ ਲੌਂਗੋਵਾਲ ਹਾਰਨ ਕਾਰਨ ਹਲਕਾ ਇੰਚਾਰਜ ਬਣੇ। ਉਨ੍ਹਾਂ ਵੀ ਸ੍ਰੀ ਭੱਠਲ ਵਾਂਗ ਗਰਾਂਟਾਂ ਬਥੇਰੀਆਂ ਵੰਡੀਆਂ ਪਰ ਕਿਲੇ ਲਈ ਧੇਲਾ ਨਹੀਂ ਦਿੱਤਾ। ਹੁਣ ਨਵੀਂ ਹਲਕਾਬੰਦੀ ਵਿਚ ਵਿਧਾਨ ਸਭਾ ਧਨੌਲਾ ਨੂੰ ਤੋੜ ਕੇ ਬਰਨਾਲਾ ਵਿਧਾਨ ਸਭਾ ਹਲਕੇ ਵਿਚ ਪਾ ਦਿੱਤੇ ਜਾਣ ਕਾਰਨ ਲੌਂਗੋਵਾਲ ਇਸ ਤੋਂ ਬਾਹਰ ਹੋਣ ਕਾਰਨ ਭਾਈ ਗੋਬਿੰਦ ਲੌਂਗੋਵਾਲ ਨੇ ਧੂਰੀ ਹਲਕੇ ਵੱਲ ਕੂਚ ਕਰ ਲਿਆ। ਸ਼ੁਰੂ ਤੋਂ ਇਸ ਹਲਕੇ ਦੀ ਰਵਾਇਤ ਰਹੀ ਹੈ ਕਿ ਇਥੋਂ ਆਮ ਤੌਰ ਉਤੇ ਸਰਕਾਰ ਵਿਰੋਧੀ ਵਿਧਾਇਕ ਹੀ ਵਿਧਾਨ ਸਭਾ ਵਿਚ ਜਾਂਦਾ ਰਹੇ ਹਨ। ਆਜ਼ਾਦੀ ਤੋਂ ਬਾਅਦ ਬਹੁਤਾ ਸਮਾਂ ਇਥੋਂ ਸਵਰਗੀ ਜਥੇਦਾਰ ਕਾਮਰੇਡ ਹਰਦਿੱਤ ਸਿੰਘ ਭੱਠਲ ਨੇ ਨੁਮਾਇੰਦਗੀ ਕੀਤੀ। ਹੁਣ ਵੀ ਬਰਨਾਲਾ ਹਲਕੇ ਤੋਂ ਕਾਂਗਰਸ ਦੇ ਕੇਵਲ ਸਿੰਘ ਢਿੱਲੋਂ ਵਿਧਾਇਕ ਹਨ ਤੇ ਸਰਕਾਰ ਅਕਾਲੀ-ਭਾਜਪਾ ਦੀ ਹੈ।
ਦਿਲਚਸਪ ਗੱਲ ਤਾਂ ਇਹ ਹੈ ਕਿ ਪਾਰਲੀਮੈਂਟ ਵਿੱਚ ਸੰਗਰੂਰ ਪਾਰਲੀਮੈਂਟ ਹਲਕੇ ਤੋਂ ਕਾਂਗਰਸ ਦੇ ਇਸ ਸਮੇਂ ਵਿਜੈ ਕੁਮਾਰ ਸਿੰਗਲਾ ਐਮਪੀ ਹਨ ਜਦੋਂ ਕਿ ਅਕਾਲੀ ਦਲ ਵੱਲੋਂ ਸੁਖਦੇਵ ਸਿੰਘ ਢੀਂਡਸਾ ਰਾਜ ਸਭਾ ਮੈਂਬਰ ਹਨ ਪਰ ਦੋਵਾਂ ਨੇ ਕਿਲ੍ਹੇ ਖਾਤਰ ਇਕ ਗਲੀ ਵਾਲਾ ਪੈਸਾ ਤੱਕ ਨਹੀਂ ਦਿੱਤਾ ਤੇ ਨਾ ਹੀ ਪੰਜਾਬ ਦਾ ਸਭਿਆਚਾਰਕ ਤੇ ਪੁਰਾਤੱਤਵ ਵਿਭਾਗ ਇਸ ਵੱਲ ਸਵੱਲੀ ਨਜ਼ਰ ਨਾਲ ਦੇਖ ਰਿਹਾ ਹੈ। ਜੇ ਇਸੇ ਤਰ੍ਹਾਂ ਇਹ ਬੇਰੁਖੀ ਜਾਰੀ ਰਹੀ ਤਾਂ ਉਹ ਦਿਨ ਦੂਰ ਨਹੀਂ ਜਦੋਂ ਇਹ ਕਿਲ੍ਹਾ ਢਹਿ-ਢੇਰੀ ਹੋ ਜਾਵੇਗਾ ਤੇ ਧਨੌਲਾ ਕਸਬਾ ਇਸ ਵਿਰਾਸਤੀ ਇਮਾਰਤ ਤੋਂ ਵਾਂਝਾ ਹੋ ਜਾਵੇਗਾ। ਹੈਰਾਨੀ ਵਾਲੀ ਗੱਲ ਤਾਂ ਇਹ ਹੈ ਕਿ ਪੰਜਾਬ ਪੁਲੀਸ ਇਸ ਕਿਲੇ ਨੂੰ ਥਾਣੇ ਦੇ ਤੌਰ ਉਤੇ ਤਾਂ ਵਰਤ ਰਹੀ ਹੈ ਪ੍ਰੰਤੂ ਇਸ ਦੀ ਖਸਤਾ ਹਾਲਤ ਵੱਲ ਧਿਆਨ ਹੀ ਨਹੀਂ ਦੇ ਰਹੀ।

ਪਿਛਲੇ ਦਿਨੀਂ ਇਕ ਦੋਸਤ ਨਾਲ ਪੰਜਾਬੀ ਸੱਭਿਆਚਾਰ ਦੀ ਯਾਦ ਦਿਵਾਉੁਾਦੀਆਂ ਚੀਜ਼ਾਂ ‘ਤੇ ਗੱਲਬਾਤ ਤੁਰ ਪਈ ਤਾਂ ਉਹ ਬਹੁਤੀਆਂ ਗੱਲਾਂ ਤੋਂ ਕੋਰਾ ਸੀ | ਪੇਂਡੂ ਜ਼ਿੰਦਗੀ ਦਾ ਬਦਲਿਆ ਰੂਪ ਉਸ ਦੀਆਂ ਗੱਲਾਂ ਵਿਚੋਂ ਝਲਕ ਰਿਹਾ ਸੀ ਤੇ ਉਹ ‘ਛੰਨੇ’ ਦੀ ਹੋਂਦ ਤੋਂ ਵੀ ਅਣਜਾਣ ਸੀ, ਜਿਹੜਾ ਵਾਰ-ਵਾਰ ਕਹਿ ਰਿਹਾ ਸੀ, ‘ਛੰਨਾ’, ਭਲਾ ਇਹ ਕੀ ਹੁੰਦੈ, ਅਸੀਂ ਤਾਂ ਕਦੇ ਇੰਟਰਨੈੱਟ ‘ਤੇ ਵੀ ਨਹੀਂ ਦੇਖਿਆ ਇਹ… |’
ਇਹ ਉਸ ‘ਕੱਲੇ ਦਾ ਹਾਲ ਨਹੀਂ, ਪਿੰਡਾਂ ‘ਚ ਪੈਦਾ ਹੋਣ ਵਾਲੇ ਨਵੇਂ ਪੂਰ ਦੇ ਵੱਡੇ ਹਿੱਸੇ ਦਾ ਹੈ, ਜਿਨ੍ਹਾਂ ਨੂੰ ਰਸੋਈ ਨਾਲ ਜੁੜੀਆਂ ਇਹ ਚੀਜ਼ਾਂ ਦੇਖਣ ਨੂੰ ਨਹੀਂ ਮਿਲੀਆਂ | ਗੀਤ, ਬੋਲੀਆਂ ਸਾਡੇ ਸੱਭਿਆਚਾਰ ਦੀ ਤਰਜਮਾਨੀ ਕਰਦੇ ਹਨ, ਪਰ ਪੁਰਾਣੇ ਗੀਤਾਂ ਨੂੰ ਸੁਣਨ ਦੀ ਥਾਂ ਨਵਿਆਂ ਵੱਲ ਜ਼ਿਆਦਾ ਧਿਆਨ ਦਿੱਤਾ ਜਾਂਦੈ ਤੇ ਵਿਆਹਾਂ ਦਾ ਸਰੂਪ ਏਨਾ ਬਦਲ ਚੁੱਕੈ ਕਿ ਉਥੇ ਬੋਲੀਆਂ ਪਾਉਣ ਦਾ ਵਕਤ ਕਿਸੇ ਕੋਲ ਨਹੀਂ ਹੁੰਦਾ | ‘ਛੰਨਾ’ ਪੁਰਾਣੇ ਪੰਜਾਬ ਦਾ ਪਿੱਤਲ ਜਾਂ ਕੈਂਹ ਦਾ ਅਜਿਹਾ ਬਰਤਨ ਹੈ, ਜਿਹੜਾ ਹਰੇਕ ਦੀ ਰਸੋਈ ਵਿਚ ਇਕ-ਇਕ ਨਹੀਂ, ਸਗੋਂ ਕਈ-ਕਈ ਦੀ ਗਿਣਤੀ ਵਿਚ ਹੁੰਦਾ ਸੀ | ਜਿਵੇਂ ਹੁਣ ਦੁੱਧ, ਚਾਹ ਦੀ ਵਰਤੋਂ ਲਈ ਤਰ੍ਹਾਂ-ਤਰ੍ਹਾਂ ਦੇ ਡਿਜ਼ਾਈਨਦਾਰ ਕੱਪ ਵਰਤੇ ਜਾਂਦੇ ਨੇ, ਉਦੋਂ ਇਵੇਂ ਨਹੀਂ ਸੀ ਹੁੰਦਾ, ਸਗੋਂ ਬਹੁਤੀ ਵਾਰ ਇਹ ਚੀਜ਼ਾਂ ਪੀਣ ਲਈ ਛੰਨੇ ਦੀ ਹੀ ਵਰਤੋਂ ਕੀਤੀ ਜਾਂਦੀ ਸੀ | ਇਕ ਤਾਂ ਇਸ ਵਿਚ ਮਾਤਰਾ ‘ਚ ਜ਼ਿਆਦਾ ਚੀਜ਼ ਪੈ ਜਾਂਦੀ ਸੀ, ਦੂਜਾ ਛੰਨਾ ਬਹੁਤੀ ਗ਼ਰਮ ਚਾਹ, ਦੁੱਧ ਪਾਉਣ ਦੇ ਬਾਵਜੂਦ ਖੁਦ ਜ਼ਿਆਦਾ ਗ਼ਰਮ ਨਹੀਂ ਸੀ ਹੁੰਦਾ ਤੇ ਤੀਜਾ ਉਦੋਂ ਛੰਨਾ, ਬਾਟੀ ਆਦਿ ਹੀ ਜ਼ਿਆਦਾ ਵਰਤੋਂ ਵਿਚ ਆਉਣ ਵਾਲੇ ਭਾਂਡੇ ਸਨ |
‘ਛੰਨੇ’ ਨਾਲ ਸਬੰਧਤ ਬਹੁਤ ਸਾਰੇ ਲੋਕ ਗੀਤ ਪ੍ਰਚਲਤ ਹੋਏ ਨੇ, ਜਿਨ੍ਹਾਂ ਨੂੰ ਲੰਘੇ ਵੇਲ਼ੇ ਦੇ ਬਹੁਤ ਸਾਰੇ ਕਲਾਕਾਰਾਂ ਨੇ ਸ਼ਿੱਦਤ ਨਾਲ ਗਾਇਐ | ‘ਛੰਨਾ ਭਰਿਆ ਦੁੱਧ ਦਾ ਮੈਂ ਲੈ ਚੁਬਾਰੇ ਚੜ੍ਹਦੀ’, ‘ਬੜੇ ਚੰਗੇ ਲੱਗਦੇ ਸੀ ਦੁੱਧ ਦੇ ਛੰਨੇ, ਰਸਭਰੇ ਗੰਨੇ’ ਆਦਿ ਦੱਸਣ ਲਈ ਕਾਫ਼ੀ ਹਨ ਕਿ ਲੰਘੇ ਵੇਲੇ ਛੰਨੇ ਨੂੰ ਕਿੰਨਾ ਅਹਿਮ ਸਥਾਨ ਪ੍ਰਾਪਤ ਸੀ |
ਪਿਛਲੇ ਦਿਨੀਂ ਜਦੋਂ ਇਕ ਬਜ਼ੁਰਗ ਨਾਲ ਪੁਰਾਣੇ ਪੰਜਾਬ ਦੀਆਂ ਗੱਲਾਂ ਸਾਂਝੀਆਂ ਕਰਦਿਆਂ ‘ਛੰਨੇ’ ਬਾਬਤ ਪੁੱਛਿਆ, ਤਾਂ ਉਨ੍ਹਾਂ ਦਾ ਜਵਾਬ ਬੜਾ ਰੌਚਕ ਸੀ, ‘ਪੁੱਤ ਸਾਡੇ ਵੇਲਿਆਂ ਵਿਚ ਖੁਰਾਕਾਂ ਚੰਗੀਆਂ ਹੁੰਦੀਆਂ ਸੀ ਤੇ ਛੰਨੇ ਵਿਚ ਦੁੱਧ, ਦਹੀਂ ਚੰਗੀ ਮਾਤਰਾ ਵਿਚ ਪੈ ਜਾਂਦੇ ਸੀ…ਅਸੀਂ ਤਾਂ ਡੀਕ ਲਾ ਕੇ ਘਿਓ ਦਾ ਭਰਿਆ ਛੰਨਾ ਪੀ ਜਾਂਦੇ ਸਾਂ…ਪਰ ਹੁਣ ਜਿਹੜੇ ਨਿੱਕੇ-ਨਿੱਕੇ ਕੱਪ ਜਹੇ ਆਏ ਨੇ, ਇਨ੍ਹਾਂ ਵੱਲ ਦੇਖ ਤਾਂ ਇੰਜ ਲੱਗਦੈ, ਜਿਵੇਂ ਇਨ੍ਹਾਂ ‘ਚ ਚਾਹ ਮਿੱਠਾ ਚੈੱਕ ਕਰਨ ਨੂੰ ਹੀ ਪਾਈ ਹੋਵੇ… |’
